2) Bread Roll:

How to Make Aloo Kulcha:

Step 1: Making the Dough –

  • Combine the following ingredients in a mixing bowl:
  • 1 cup whole grain flour
  • 1/4 teaspoon baking soda 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt (or as needed)
  • 2 tablespoons fresh yoghurt + 3 teaspoons oil Use any flavourless and neutral oil.
  • Pour in some water. I added 2/3 cups of water in sections; you can add 1/2 to 2/3 cups of water.
  • Make the dough until it is smooth, stretchy, and soft.
  • Set the dough aside for 2-3 hours.

Step 2: Mashing the Potatoes –

  • 4 to 5 potatoes, steamed or boiled until completely cooked
  • The potatoes should then be mashed gently.

Spices Used –

  • Mix in the spices and herbs listed below:
  • 1 tsp green chillies, chopped
  • 1/2 tsp red chilli powder
  • 1/2 tsp dried mango powder
  • 1/4 to 1/2 tsp garam masala powder
  • 2 tbsp coriander leaves

4) Kukuri Bhindi:

Kurkuri Bhindi is a gluten-free crispy ladyfinger fry in the Indian style. It’s a great side dish to go with spicy dal or any other vegetarian curry.

Kurkuri means crisp and crunchy in Hindi, and Bhindi means ladyfinger. This Bhindi Fry recipe is a quick snack dish.

How to Make Kukuri Bhindi –

Step 1: Rinsing the Bhindi:

Rinse 500 g bhindi thoroughly in water. Then, using a kitchen napkin, wipe them dry. Likewise, you can spread them out on a large plate and let them dry naturally.

Step 2: Chopping the Bhindi:

Remove the bhindi’s crown and base tip. Cut the bhindi into four pieces vertically. If you have a small bhindi, cut it into two pieces.

Step 3: Mixing the Bhindi

Now, individually, drizzle the chopped bhindi with the following spices and herbs:

  • 1/2 tsp turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon ground coriander
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp dried mango powder
  • 1 tsp chaat masala powder
  • salt as needed
  • Mix the spice powders, and salt gently. Remember to coat all of the bhindi slices evenly with flour and ground spices.
  • Marinate the bhindi for 20 to 30 minutes in this mixture.

5) Arbi Kofta:

Arbi kofta is a tea-time snack that consists of boiled Arbi cooked in water brown flour with chilli, rock salt, carom seeds, and ginger. This crisp-fried snack is served hot with a refreshing cucumber, mint, and yoghurt dip.



How to Make Arbi Kofta –

Step 1: 

Boil the Arbi in a pressure cooker or a pan until soft.

Step 2:

Peel them all and combine them with the remaining ingredients.

Mash everything well and evenly.

Form into cylinders and pan fry in oil until golden brown.

Step 5:

To drain excess water, hang the yoghurt.

Step 6:

Heat the milk in a bowl with citric acid.

Step 4:

In a pan, heat some oil and add the tomato paste.

Cook until it turns red, then season with salt, haldi, coriander powder, cumin powder, and red chilli powder.

Combine all of the ingredients:

  • 4 tomatoes
  • 3 green peppers
  • 1 teaspoon ginger
  • 3 tablespoons Paneer
  • 1 teaspoon coriander leaves
  • 1 Kasuri Methi combined with paneer
