1) BROCCOLI PARATHA:

This Broccoli paratha is a little variation from typical parathas. Instead of inserting the veggies inside the rolled-out roti, we crush them into a smooth paste. Mix it into the flour while kneading the dough. It is certainly a nutritious dish and an easier method to consume this nutrient-dense vegetable. As you may have observed, I have included a variety of vegetarian paratha recipes on my website. It is an easy approach to boosting the nutritional value of a meal.

INGREDIENTS:

  • 15 cups whole wheat flour
  • 1 tbsp all-purpose flour
  • 1/2 crown broccoli
  • Onion – 1/2
  • 1 clove of garlic
  • 2 green chilies
  • A sprinkle of garam masala
  • A pinch of turmeric powder
  • 1/2 teaspoon carom seeds
  • Season with salt to taste

PREPARATION:

  1. Put enough water to a boil, then add around 10 florets and some salt.
  2. After 2 minutes, remove the florets and blend with turmeric powder, garlic, garam masala, and green chilies to make a fine paste.
  3. Combine wheat flour, all-purpose flour, the ground combination, some chopped onions, carom seeds, and salt in a mixing bowl.
  4. The dough is like a chapatti with the desired amount of water.
  5. At this point, you can let the dough rest for a few minutes.
  6. Roll out each ball like you would chapattis.

2) KHAMAN DHOKLA:

Khaman Dhokla is a classic Gujarati dish. It is made with chickpea flour in which the besan is seasoned with sour curd. It is then seasoned with green chilies, cooked, sliced into little pieces, and finished with an aromatic seasoning.

INGREDIENTS:

  • 2 cups g flour
  • 2 – 3 tbsp sugar
  • 2 tbsp oil
  • 3/4 teaspoon citric acid
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 3 green chiles (finely chopped)
  • Ginger – 1/2 finely chopped)
  • A pinch of asafoetida
  • Water

PREPARATION:

  1. In a mixing bowl, combine the dry ingredients (besan, citric acid, salt, sugar, turmeric, finely chopped green chilies, and grated ginger).
  2. Mix in 1/2 cup of water, making sure there are no lumps.
  3. Add an additional 1/2 cup of water and oil. If necessary, add extra water. It should be plenty to produce a thick batter.
  4. Using a hand blender or an electric mixer, thoroughly whisk it. To make the batter light and fluffy, we must introduce air.
  5. Allow the batter to rest for 10 minutes.
  6. When it begins to sputter, add 1/2 cup of water, salt, sugar, and lemon juice.
  7. Pour the water slowly over the dhokla pieces.
  8. Garnish with shredded coconut and fresh coriander leaves.

3) EGG CHAAT:

We all know that eggs are rich in protein. Protein is the building block of our body. Eggs can help overcome protein deficiency along with no oil and fats involved it can be an easy solution for weight loss!

INGREDIENTS:

  • 3 hard-boiled eggs
  • 1 tablespoon tomato ketchup
  • 1 tablespoon tomato chili sauce
  • 1 tsp lemon juice 3 tsp tamarind extract
  • 1 teaspoon toasted cumin
  • Season with salt to taste
  • 1 green pepper
  • 1 sliced spring onion 2-3 tbsp boondi

PREPARATION:

  1. To make the sauce, combine tomato ketchup, tomato chili sauce, tamarind extract, lemon juice, roasted cumin, green chili, and salt in a mixing bowl.
  2. In a bowl, Cut the boiled egg in half and put the chutney on top.
  3. Sprinkle the eggs with chopped spring onion, garam masala, and boondi.
  4. Finally, the Egg Chaat is ready to be served.

4) CHICKEN MASALA:

Chicken tikka masala is a spicy curry sauce-covered roasted marinated chicken piece. Curry is often creamy and orange in color. It’s the most basic and straightforward chicken meal to attempt at home, ready in less than an hour! Chicken masala goes well with steamed rice or your favorite Indian bread, such as roti, naan, or hot and steaming parathas.

This recipe for oil-free chicken masala will make you believe in all good in life! When fiery spices and creamy yogurt are combined with chicken pieces, the result is an enticing chicken treat. This high-protein chicken treat will keep you full for a long time!

INGREDIENTS:

  • 1 chicken cut into pieces
  • 1 tsp lemon juice
  • 3 chopped tiny onions
  • 3-4 slit green chilies
  • 4 smashed garlic cloves
  • 1 tablespoon ginger
  • 1 teaspoon vinegar
  • 1 teaspoon red chili powder
  • 2 teaspoon cumin seeds
  • 1 tablespoon coriander powder
  • 1/2 teaspoon allspice powder
  • 1/2 teaspoon paprika
  • Salt
  • yogurt (250 mL)

PREPARATION:

  1. Combine the chicken, lemon juice, and onions in a mixing bowl. Allow it to rest.
  2. After that, combine all of the additional ingredients in the yogurt and pour over the chicken.
  3. Now, in a nonstick skillet, fry the chicken till it has a beautiful thick coating of masala on it.
  4. Check for seasoning and serve with coriander leaves.



5) IDLI:

Idli is a South Indian tasty dish that is devoured all throughout India. This dish is the simplest method to add oats into your everyday diet. Idli is incredibly delicious when served with sambhar curry and coconut chutney. Idlis are often eaten for breakfast or as a snack.

INGREDIENTS:

  • 1 cup oats
  • 1 cup cooked rice
  • a handful of urad dhal
  • 1/2 cup fenugreek seeds
  • 1 teaspoon salt
  • 2 teaspoon oil – to butter an idli pan

PREPARATION:

  • Separately soak the urad dal and rice for at least 3 hours or overnight. While the rice is soaking, add the fenugreek seeds.
  • Before grinding the oats, soak them for 5 minutes.
  • Separately, grind the urad dal until it is frothy.
  • Grind the rice, oats, fenugreek seeds, and a handful of cooked rice together. The addition of cooked rice makes the idlis extremely fluffy.
  • Finally, combine everything, including the salt, to produce a lovely batter.
  • Allow it to ferment overnight or until it has doubled in size.
  • Make idlis and serve with chutney, sambhar, kurma, or a non-vegetarian dish.
